Friends, Romance, Countrymen...

To do a play on Shakespeare's words.....

If you were wondering where I had disappeared to, fret no more - I went on a short holiday!!

My longest suffering friend Hazel moved up to Carlisle a few months ago and after promising continually to visit but never having enough money to spare for the extortionately priced train fare my boyfriend had the idea of killing two birds with one stone (proverbially speaking) and suggested that we take a couple of days off and drive up there to combine a visit to her with a romantic jaunt around the Lake District (he's a sweetie right?!).

Of course I jumped at the chance so we booked a room at an Inn in Keswick and on Sunday morning we set off.

The journey was delightfully easy and traffic free, after hearing horror stories from other people about how long it can take to get up there.

After arriving and checking into our lovely room we met up with Hazel in the town and after a pint of cider took a walk to Derwent Water, which was just stunning.

We strolled back into Keswick for a mug of hot chocolate and a natter. All in all a glorious sunny day which we made the most of knowing that normally the Lake District is renowned for its unclement weather.

The following day Oli and I decided we'd like to do some proper hill walking - so armed with our trusty hiking guide we set off to tackle Catbells.




For those not in the know, Catbells is a fell with a modest height of 451 metres (1,480 ft), but despite this it is one of the most popular fells in the area.

I would love to say I was as brave as our own dear Vix and that I wore fabulously outlandish clothes for hiking but I'm sorry to report that cowardice and the need to be comfortable when scrambling across rocky outcrops prevented me from doing so. I do however think walking trousers could be more nicely made, they are deeply unflattering when one has a little junk in one's trunk....







Having scaled Catbells' summit we headed back into Keswick where we took advantage of the lovely sunshine and sat outside with an ice cream.


But we didn't rest for long. Not content with having climbed Catbells that morning we got back into the car and drove to Haystacks.



Anyone well versed in Lakes history or indeed English Literature will know that Haystacks was a beloved site of the writer and fell walker Alfred Wainwright. It is a more demanding hike than Catbells and can be a little daunting at times but the views from its lofty heights were more than worth it.





This is the 'tarn' or hilltop lake where Wainwright requested his ashes be scattered upon his death.



 
I think I look particularly smug in this photo, possibly because I was pleased as punch not to be suffering from vertigo at this moment in time...
 
After two hill walks that day we were worn out and grateful to be going to Hazel's house in Carlisle for a home cooked meal that night.
 
On Tuesday we headed South to Grasmere and stopped off at Sarah Nelson's infamous gingerbread shop.


 
Sarah Nelson was a poor woman who eventually carved out a living for herself and family with her special, secret recipe gingerbread. The cottage that houses her shop was originally the village school where Wordsworth once taught.
 
The recipe for her gingerbread is so secret that it is locked in a vault in the National Westminster Bank in Ambleside!! I'm not surprised, it is without a doubt the most unusual and delicious gingerbread I've ever eaten. And yes, I brought lots home. More info on Sarah Nelson here
 
We wandered around Grasmere, it's very quaint and full of tea houses.



A noble sentiment.

We then had a quick pit stop in Ambleside for a peek at the famous Lake Windermere.




Finally we headed further South for one last walk, this time around a tarn called Devoke Water.

It was so beautiful and peaceful, you can walk for hours without seeing a single soul.

We came home knowing our 'tarns' from our 'cairns' and seriously bitten by the hiking bug!! Planning to go up there again very soon.

What Lisa Baked: Steak, Mushroom, Guinness & Stilton Pie and Fruit Crumble

So here is the recipe post I teased you with yesterday.

This blog in its previous incarnation was all about my love for cooking and baking, but due to the fact I don't tend to cook anything overly exciting during the week and find I have less and less time to bake it didn't get utilised to it's full potential, which is why I now use it as a vehicle for wittering on about my life in general.

However, on Sunday's I like to eat. A LOT.

Sunday is the one day of the week where I like to keep it simple and lazy. I'm so busy for the other six days that on the seventh I like to wake up late, then lay in bed watching a DVD or catching up on programmes I've missed on iPlayer. I tend to drag myself out of the comfort of my bed at about 10:30am, or whenever the growls of my stomach have become so loud they're drowning out whatever I'm watching, and make myself some brunch. I then retire to the sofa for a couple more hours and read the Sunday papers.

By the time 2:00pm comes around I start to get cabin fever, this is the point at which I'll throw on some scruffy clothes and go for a long walk. Or I take over my kitchen for some serious food preparation.

On Sunday I decided to make a big manly pie for my boyfriend and I, followed by one of my favourite autumnal Sunday desserts - crumble.

Now most of you probably know how to make pies and crumbles but I'll share my recipes with you anyway because it's fun and everyone likes reading about food surely?!

Firstly the pie. It serves two very hungry (and greedy people) or four moderately peckish people.

You will need:

approx. 400g of good quality beef, either diced, or casserole/stewing steak
440ml guinness
a glug of olive oil
a sizeable chunk of butter
2 tablespoons of plain flour
one red onion
one shallot
two cloves of garlic
approx 100g button mushrooms
a good chunk of stilton!
two sheets of chilled puff pastry (if you're lazy like me)
any herbs you'd like to add, rosemary or thyme is nice.
liberal amounts of black pepper, a conservative amount of salt


first peel and finely chop your onion, shallot and garlic


fry gently in the olive oil until golden and soft


dice the mushrooms and add to the onion, shallot and garlic along with the chunk of butter and fry until soft and browned


if your beef isn't already diced cut it into bite size pieces


and brown it in the pan


next add your guinness and flour and simmer on the hob for at least an hour or until the liquid has reduced to a thick gravy. cut up your stilton and stir into the mixture until melted, this will make the gravy even thicker!!

grease your pie dish and roll out one of the sheets of pastry then lay it into the pie dish so it covers the bottom and sides.

add your filling and then roll out the second sheet of pastry and lay over the top of the dish, crimping the edges to the top of the first layer of pastry.

lightly egg wash the top of the pie then put into the oven for one hour at 180 degrees.

when your pie comes out of the oven it should be a delightful golden brown like this....


serve piping hot with peas and green beans (if you like those vegetables)



Now for my easy peasy Fruit Crumble!!

You will need:

two apples (I used Golden Delicious)
approx 100g of frozen berries
two tablespoons caster sugar
250g plain flour
150g sugar
200g butter

first either cut or grate the apples (i grate mine) and add to an oven proof dish

then add the frozen fruit and sprinkle the two tablespoons of caster sugar over the top


in a bowl mix the sugar, butter and flour together using your hands until you have a soft crumbly almost pastry...

add a pinch of cinnamon or nutmeg to taste if you like that sort of thing


spoon over the top of the fruit filling and pat down firmly so it covers the dish completely



bake in the oven at 180 degrees for approx 40 minutes or until the topping is golden brown and the filling is trying to bubble over the sides of the dish

serve with plenty of custard if you're so inclined.


Honestly after eating all of that I thought I was going to pop!! But it was so worth it.

Ladies that brunch, a Birthday in Brazil (!) and making gin

Hi there!

I hope you all had a lovely weekend.

Mine was excellent but went far too quickly, as they always do!!

On Saturday I met up with Clare for a very grown up (or as grown up as we get!) brunch. We both plumped for eggs benedict and freshly squeezed orange juice. Turned out the juice was so fresh it had already attracted a couple of thirsty little flies, we sent our drinks back and were given new ones, only for Clare to find another guest towards the bottom of her glass!! We complained - very nicely, apologetically and in typical British fashion - and received a refund. The food was delicious so we'll definitely go back, we just might not have the juice again!!

Clare looked amazing, I am so envious of her hair right now!

Getting a bit addicted to having my nails done properly by a professional!!

On Saturday night one of my very good friends Isabelle celebrated her 30th birthday.
We started the night at the house she shares with her tres amusing boyfriend Rich, who made her this amazing looking cake!!




In true Isabelle fashion (she does this every year) the location of her birthday bash was kept a secret from us, all we knew was that we were all getting a mini-bus into London for the evening.....
It turned out she had put us on the guest list for a bar/club in the West End called Guanabara which coincidentally due to my love of brazilian music and all things 'carnival' related I had been dying to go to for ages!!

On Sunday I had made plans to go over to my Aunt's house so we could make sloe gin in preparation for Christmas (I'll be giving mine out in little bottles to people as gifts). I have to say that buying two 1 litre bottles of gin at quarter to 11 on a Sunday morning when you have a raging hangover does not feel classy.




Luckily my Aunt made me a delicious 'pick me up' lunch of North African spiced soup with mediterranean herb bread


And I got lots of cuddles and kisses from her two lovely dogs.....
